Lohri is here! The harvest festival of north India is being celebrated today, January 14. Also called Lal Loi, this festival is mostly celebrated in Punjab, Delhi, Haryana and Himachal Pradesh. The celebrations typically involve lighting a holy bonfire and offering prayers and food to the fire God.
The festive spirit of Lohri extends to joyous celebrations filled with music, dance, vibrant attire, and the delight of indulging in snacks that bring warmth to the chilly atmosphere. It’s a time when many seize the opportunity to host Lohri parties at home, preparing delectable dishes and relishing them in the company of loved ones. Among the most cherished treats during this celebration is gur makhana.
Makhana, commonly known as fox nuts, undergoes a delightful transformation into a crunchy and flavourful treat through the process of caramelization with jaggery. This snack is not only delicious but also packed with nutrients, offering a wealth of manganese, potassium, magnesium, thiamine, protein, and phosphorus. Whether enjoyed in their raw state or fried, these fox nuts are particularly rich in amino acids. For those keen to try making Gur Makhana at home, here’s a quick recipe worth exploring.
Ingredients
- 1 tbsp Ghee
- 4 cups Makhana (100g)
- ½ cup Gur (125g)
- ½ tsp Baking soda
- ¼ cup Sesame (35g)
- 2 tsp Saunf
- Salt a pinch
- ½ tsp Black pepper
- 2 pinches of Black salt
Method
- Step 1Take a pan and roast makhanas in ghee over medium flame. Once done, set them aside.
- Step 2Next, add ghee and jaggery to the pan. Cook the jaggery until it caramelises and transforms into a smooth paste.
- Step 3Into the caramelised jaggery, add baking soda and mix it well.
- Step 4Now, add the roasted makhanas with sesame seeds, black pepper, ginger powder, black salt, saunf and a pinch of salt to the mixture. Mix well to ensure all ingredients are evenly coated.
- Step 5Transfer the mixture onto a tray and allow it to cool down. Once cooled, separate any stuck-together makhanas and serve.
