One of the ways to beat the heat in summer is to consume cool sorbets and smoothies. But all this comes after ice creams. Right? Everyone, regardless of age, enjoys this frozen treat. Whether it’s classic vanilla or tropical ice cream, the cravings will never go away. Furthermore, if you enjoy making ice cream at home, you must try Chef Kunal Kapur’s unique summer delights.

In his recent Instagram posts, this popular Chef has shared some delectable ice cream recipes that can be easily made at home. As per Kunal Kapur, “Summers = Mangoes, and when summers give you mangoes, why not turn them into mango Icecream?”

So, here are some of his superb homemade ice cream recipes that will cure your boredom and provide instant cooling.

Mango ice cream: Mango, the king of fruits, is the summer’s saviour, and mango-flavoured ice creams continue to stay on the top of the list. This recipe is creamy, silky, and thick, and it requires only a few ingredients.

Ingredients:

Milk- 1¼ cup

Mango, diced – 2.5cups/500gms

Raw mango – ½ cup/75gm

Condensed milk – 10 tbsp/190gm

Custard powder- 1tbsp

Milk – ¼ cup

Cream – 100 gm

Method:

  • Take a pan, pour 1¼ cup milk and bring it to a boil.
  • Simmer and stir to reduce the milk to 50%.
  • Add some ripe mango, raw mango and condensed milk to the jar of a mixer grinder and blend them into a smooth pulp.
  • Add it straight to the reduced milk and simmer over low heat for 3-4 minutes.
  • Meanwhile, whisk the custard powder into 1/4 cup of milk until it is completely dissolved.
  • Pour this custard mix over the simmering mango pulp. Continue to cook it for another 5 minutes on low heat.
  • Now, remove it from the heat and pour in the cream and mix it.
  • Cool it completely and then add it to the mixer grinder to blend it for 30–45 sec.
  • Next, pour the mango ice cream mixture into a freezing tray and place it in a deep freezer till it solidifies.
  • Remove and scoop out the homemade ice cream into bowls.
  • Finally, garnish with freshly cut mango and mint leaves and serve frozen.

Vanilla ice cream: Vanilla is one of the most popular flavours, followed by mango, and is very easy to prepare at home.

Ingredients:

Condensed milk caramelised – 1 cup

½tsp Cardamom

Dried desiccated coconut – 2 cups

1 tsp Vanilla extract

Method:

  • Place an unopened can of condensed milk in a saucepan and fill it with water.
  • Boil it covered for 2 hours. Remove the can and let it cool, then open it.
  • In a mixing bowl, pour 1 cup of that caramelised condensed milk.
  • Next, add desiccated coconut, and cardamom powder.
  • Add 1tsp vanilla extract.
  • Mix them thoroughly and shape them into small laddoos (balls).
  • Finally, dunk them in dried coconut and serve.
