Onion Rice: This Easy-to-make Delicious Recipe Is A Must-try At Home

The summer season calls for cold drinks and refreshing fruits like watermelon, mango and grapes. In terms of meals, indulging in a heavy diet often leaves us feeling sluggish and uncomfortable amid the summer heat. Switching to light meals can be the best option in this scenario. Rice can be a good option. There are various recipes which include rice. It is easy-to-make and requires less cooking time. These are the reasons for its dominance at home. Onion rice is also one of them. Made from leftover rice, this dish is rich in spices and vegetables, tasting similar to vegetable pulao. It is easy to make, requires minimum ingredients and can be made in minutes. Let us take a look at the recipe.

To cook Onion Rice, you need to arrange a few ingredients such as Basmati rice – 1 cup

Chickpeas – 2 tbsp

Big onion – 2

Green chillies – 4

Whole garlic – 1

Tamarind water – quarter cup

Oil – 2 tbsp

Mustard – 1 spoon

Cumin – 1 spoon

Turmeric powder – 1/4 spoon

Chili powder – 1 spoon

Fenugreek powder – 1/4 spoon

Curry leaves – a little

Coriander leaves – a little

Salt – as per taste

Recipe

Take the basmati rice and soak it in water for one to two hours. After soaking it for a couple of hours, strain the basmati rice, cook it with a little salt and keep it separately. You can also use the leftover rice.

Next, take a pan and pour some oil in it. After it becomes hot, add mustard seeds, cumin seeds and chickpeas. Stir them until they attain a fried golden brown colour. Add garlic cloves to increase the flavour. Once the garlic is fried, add the finely-chopped onion and saute it in the oil along with other species for two to three minutes.

Once the onions are fried to attain a golden brown colour, add chopped green chillies, turmeric powder, chilli powder, asparagus powder and the required amount of salt and mix well. Add the tamarind water and curry leaves and mix well before covering the pan with a lid. Let it cook for a couple of minutes. Once the masala is ready, add the already cooked white rice to this mix well and cook for 2 minutes.

After cooking it for a few minutes, take it out of the pan and serve it with raita or curd.
