Put the corpses in a stockpile. The dwarfs won't touch anything not in a stockpile, so you want to add a stockpile tile under your corpses.

Click the butcher knife icon. You'll see this if you open the Creature menu (press U) and go to the Pets/Livestock tab. You must have "Automatically butcher carcasses" enabled in your Standing Orders.
